In a large glass jar, add the beetroot sticks and pour in the water. Mix in the mustard seeds powder, black salt, and red chili powder, then stir well. Cover the jar with a muslin cloth and let it ferment at room temperature for 3-4 days, stirring once or twice daily. Once the kanji develops a tangy taste and deep reddish-purple color, strain the liquid and discard the beetroot pieces. Serve chilled and enjoy this refreshing, gut-friendly beverage.
